Iced Tea

Golden Moon Iced Tea - Coconut Pouchong Perfection

On those hot and steamy summer days when your thirst becomes raging, a refreshing, cooling glass of iced tea in a frosty glass really quenches your thirst. And, if your iced tea is made with Golden Moon Tea's award winning Coconut Pouchong tea you will never try another iced tea!
Ingredients:
  • 6 to 8 Table Spoons Golden Moon Tea Coconut Pouchong tea
  • 1 quart hot water (4 cups)
  • 1 quart cold water (4 cups)
  • 1/2 cup sugar or 1/4 cup honey, optional

Preparation:
Iced tea is one of those delicious flavors that just makes the summer time seem worth while. Iced Tea is natural, honest, and infinitely refreshing. Brisk and refreshing, it will open up new avenues of beverage exploration. Get out a 2-quart size sauce pan. Put the hot water in it and bring it to a boil. Add the tea . Remove the pan from the heat, and allow it to steep for 10 minutes. No more, no less. Set the timer.

If the tea sits for too long, it will extract bitter elements from the tea leaves, making the finished product taste very bitter. If it doesn't sit long enough, it won't be strong enough to give you the full flavor which iced tea was designed for.

While the tea is steeping, put the cold water into a 2-quart size pitcher. Pour the hot tea through a tea strainer into the pitcher, over top of the cold water. You put the cold water in first, because the hot tea could melt the pitcher, seeing as it is so hot.

The cold water acts as a buffer, and cools the tea. Add the sugar or honey if you like, stirring to dissolve it completely. Put the pitcher into the refrigerator to cool. Or it can be poured directly into an ice filled cup.

Green Tea Deep Fried Won tons

If you are interested in combining green tea with delicious deep fried won tons try this:
Ingredients:
  • 30 wonton wrappers
  • 1/4 cup Matcha powder
  • Nonstick cooking spray
  • 2 tablespoons of olive oil 1 clove garlic, minced
  • 1/2 teaspoon of dried basil, crushed
  • 1/4 cup of grated Parmesan or Romano Cheese
Prep Time: 10-15 min
Cooking Time: 10 min
Instructions:
Using a sharp knife, cut the wonton wrappers diagonally in half to form 60 triangles.

Spray a baking sheet with nonstick cooking spray.

Arrange one third of the triangles in a single layer on the prepared baking sheet.

In a small bowl stir together the olive oil, matcha powder garlic, and basil. Brush the wonton triangles lightly with some of the oil mixture, sprinkle with some of the Parmesan or Romano cheese.

Bake in a 350 F. oven about 8 minutes or until golden brown. Cool completely on a wire rack. Repeat with the remaining wonton triangles, oil mixture, and Parmesan or Romano cheese. Makes 60 chips

Indian Sub Continent Recipes

Lemon Tea

  • Add a few drops of lemon into a piping hot cup of freshly brewed tea without milk
  • Add sugar to taste and stir.
Sip in the goodness of tea with the richness of lemon.

Tea Punch

  • ½ pint strong tea
  • 6 oz. Sugar
  • ½ pint orange squash
  • 4 tbspns. Lemon juice
  • 2 small bottles ginger ale
  • 1 large bottle lemonade
  • 1 orange, sliced
Put the hot tea in a bowl, add the sugar and stir until dissolved. Add the orange squash and lemon juice and strain. Chill. Just before serving mix in the ginger ale, lemonade and orange slices. Sufficient for 12 people.

Kahwa

In Kashmir, tea is made in a samovar which has burning charcoal surrounding a metallic pot, and loose green tea is added to boiling water along with sugar, crushed cardamoms and almonds. For special guests, a pinch of saffron is added and the preparation is called kahwa.

Hot Black Tea

Take a Tea Pot with fresh boiling water. Add one tea spoon for every cup of tea. BREWING TIME: Tea has two main ingredients - stimulating caffeine and calming tannin. During the brewing process, caffeine is released more rapidly than tannin from the tea leaves.

Therefore, shorter brewing times result in a more stimulating cup of tea and longer brewing times in a more calming one. You can make good use of this rule : if you want a wake-me-up, use a little more tea and let it steep for no more than 3 minutes.

If you want it to have a calming effect instead, take less tea and let it steep for five to six minutes. Add Milk and Sugar to taste.

The English way, is to serve bacon and eggs and les muffins a la cannelle (cinnamon) with steaming black tea, and no meal is complete without it.

In France, they like it with salty tarts, sweet cakes, fruits and prommes grenailles in which case boiled potatoes halved and spread with salmon caviar or sour cream is also served.

And iced tea with a sprig of mint and a dash of pineapple is the largest craze. As proof of its popularity, numerous salons de tea (tea salons) have sprung up at busy street corners and small nooks in the towns of France.

Spice/Marsalla Chai

Follow the same procedure as "Hot Black Tea". Add a pinch of your choice of spice from Cinnamon, Clove or Cardamom in crushed powder form, and stir well.

Ginger Tea

Follow the same procedure as for "Hot Black Tea". Add approx half tsp (per small pot of tea) crushed ginger, while brewing.
