Little in the proper English high tea service has come about by whim or chance. Thus, the original recipe for Early Grey was created to perfectly complement finger sandwiches of cucumber, cress or smoke salmon along with various cakes and tarts. It took us a year and a half to produce an Early Grey worthy of those I've enjoyed on afternoons in London. We call ours Tippy Earl Grey and its flavor and aroma are most certainly no mistake.
