Treat Mom This Sunday With An Amazing Chai Buttermilk Pancake Recipe!

We often get lost in the commercial side of Mother's Day, but sometimes less in more! We research nice restaurants, make reservations and spend the afternoon dining on fine food. But, lost in this shuffle is the personal interaction that make holidays so special. So, if you are not doing the whole brunch thing, why not make Mom a nice meal at home? This will give you a lot more time to spend with her and that, to me, is the best and most important part of Mother's Day. In the spirit of Mother's Day, I am giving you a wonderful Chai Pancake recipe that I make at home. I originally found this recipe from the wonderful food blogger Joy the Baker. These pancakes have an amazing combination of savory and sweet and with the addition of butter and maple syrup they become almost irresistible. I like to serve these pancakes with a side of fresh fruit and a cup of our English Breakfast Tea.

  • 2 eggs

  • 2 cups flour

  • 3 tablespoons sugar

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 3/4 teaspoon ground cinnamon

  • 1/4 teaspoon ground cardamom

  • Healthy pinch of ground cloves

  • Scant 1/8 teaspoon ground ginger

  • 1/8 teaspoon crushed black peppercorns (or a dash of freshly ground black pepper)

  • 1 1/2 cups buttermilk

  • 1/2 cup brewed Black Chai Tea (I, of course, love our Kashmiri Chai in this recipe)

  • 4 tablespoons butter, melted and cooled

  • ½ teaspoons vanilla extract

  • Oil or cooking spray (for cooking)

How to make them

  1. Beat eggs in a large bowl. Mix in the Chai, butter and vanilla. Then add the flour, sugar, baking powder, baking soda, salt and spices.

  2. Heat and oil a griddle or large frying pan

  3. Pour two tablespoons on the griddle. Watch the batter until it starts to bubble in the middle. Once this happens, carefully flip the pancake with a spatula and cook until the bottom is golden brown.

  4. Serve with butter and maple syrup.

Treat your Mom to something special and straight from the heart, especially on Mother's Day. Show them how much you appreciate them - I know I do and that is why I am dedicating this edition of Tea Time to Patricia and Karen!
